ANYTHING BAKED EGGS…
Like most people this weekend I’m trying to use up everything in the fridge to make space for the Christmas food shop… this is the ideal breakfast/brunch or lunch to do just that.
Today I heated a little oil and threw in 2 finely diced small potatoes, skin and all. To that I added half a red onion, 2 handfuls chopped mushrooms, about 10 plum tomatoes, 1 chilli, salt, pepper, dried oregano, chilli flakes, garlic purée and a tin of tomatoes. In with a splash of water I cooked this for 20 mins until the potatoes were soft. Into a baking dish, make wells, crack eggs and bake at 185° for 10 mins for runny eggs. I had a bit of aldiuk lemon pepper smoked salmon left which I popped on top once served. Perfect!
You can make this recipe your own. Add a pepper if you have it, a tin of kidney beans, sprinkle with feta before you bake. You can even add bacon or sausage to make it a meat eaters brunch. Everything I added really needed using up in the next few days. A great recipe to make a big meal out of all the odds and ends.
