BAKED GREEK TOMATO COD…
Over the weekend a little recipe idea popped into my head and I just had to give it a go. I decided I want to make something with fish & Greek flavours and this is what came together.
I heated an onion in a little oil, added 3 cloves of garlic and 2 tins of tomatoes. I added chilli flakes (2tsp as I like it hot) 1 tbsp oregano and 2 tsp dill. Seasoned with Salt & pepper and then blitzed smooth.
I stirred through some fresh spinach & sliced red onions and poured into an oven dish.
I nestled some fresh cod (which I had covered with lemon juice) in the sauce, crumbled over feta and fresh parsley and baked until the fish is cooked through (about 12-15 mins)
I served the cod with herb potatoes, brocolli & garlic ciabatta bread.
