BREAKFAST or BRUNCH?
After last nights naughty lasagna I thought I better be good and start the day with some baked eggs.
These are healthy, filling and great for using up whatever veg is in the fridge. Add what you like, bacon, chorizo kidney beans…you really can’t go wrong…
Recipe:
Bar boil 2 large potatoes, diced small, skin on.
In a pan fry 1 onion, red or white, 1/2 red pepper & diced mushrooms.
Add 2tsp garlic purée, 2 tsp paprika, 1 tsp cumin, 1 tsp dried chilli flakes, 1 tsp onion powder, 1 tsp dried oregano, fresh parsley & a tin of tomatoes.
Season with salt and pepper, add par boiled potatoes and simmer until your ready to bake. Loosen with a little water if needed.
Put sauce mix in a oven dish and make wells, crack in as many eggs as you need.
Normally I would crumble over feta too but I’d run out (so I served with a little Parmesan on top)
Bake at 180 degrees until eggs are cooked how you like. These were baked for about 15 mins and the yokes were runny.
Keep an eye on your eggs checking every few mins when they are nearly done so not to over cook.
I like to serve this with fresh bread and butter from the bakery to mop up all the sauce. The perfect start to the weekend ❤️
