CHICKEN BREAST IN MUSHROOM SAUCE…
Dinner from a few nights ago is an old favourite in our house. One I’ve been making for years and always go back to. Sometimes I serve with mash but my daughter wanted mini roasties but always tenderstem brocolli.
I love anything mushroom flavoured & this is one cosy dinner I’m sure I will make time & time again…❤️
All ingredients aldiuk
3-4 chicken breast (pounded even)
200g chestnut mushrooms
2-3 garlic cloves minced (or paste) adjust to taste, I like more
1/2 US cup white wine
1 1/2 US cups chicken stock
1 1/2 US cups single cream
Salt & pepper
In a pan heat a little oil & cook your sliced mushrooms until golden.
In a separate pan heat a little oil, flour your chicken and fry on both sides until golden. Set aside.
To the cooked mushrooms add garlic & white wine. Reduce by half.
Stir in the stock, cream, seasoning & as much Parmesan as you like (loads!)
Add your chicken to the pan of sauce & simmer until the chicken is cooked. Stir in fresh parsley, taste your sauce, adjust seasoning if required & serve ❤️
