CHICKEN PARMIGIANA…
One of my all time favourite dinners!!
I don’t make this often as my other half doesn’t like anything with tomatoes… but every now and then I make this and it’s honestly a dream.
I bash chicken breasts thin season, flour & dunk in a egg wash with mixed herbs, garlic, salt & pepper. I coat in panko & Parmesan and pan fry until golden on each side. Into an oven dish and topped with my tomato sauce (made with 1 carton passata, 3 garlic cloves, 1 onion, 1 tsp mixed herbs, salt, pepper & a chicken stock cube with a splash of water, cooked and blitzed smooth) mozzarella and baked for 10 mins until golden. Sprinkled with fresh parsley & served with herb potatoes & greens! I ate way more than I should tonight but this was lush! Happy Monday guys! ❤️
