COSY CURRIED PARSNIP SOUP…
Another rainy day but I kinda like it. When your having a quite Sunday it makes it feel cosy.
Fancied an bowl of homemade soup for lunch so made up a batch of an old fav of mine. So easy, cheap & healthy. What’s more there will be loads for lunches of to freeze for another day.
Ingredients:
4 parsnips
1 large onion or 2 small
1 large carrot
1 large potato
3-4 garlic cloves or to taste
2 tbsp curry powder
1 tsp turmeric
1tsp chilli powder
Stock
Splash single cream
Salt & pepper
1 tsp Garam masala

Method:
Heat oil in a deep pan.
Dice all your veggies and add into the pan. Cook on medium for 10 mins until the veggies are starting to colour and soften.
Add in your curry powder, chilli flakes, turmeric and salt & pepper.
Add in stock cubes and boiling water until the veg is just covered.
Bring to the boil & reduce to low. Simmer until veg is soft. Blend into a smooth soup.
Add in a splash of cream, garam masala and taste. Adjust your salt & pepper as required.
If you find your soup is thicker than liked then loosen with boiling water.
The only problem will be not eating it all at once. Easy, cosy lunch ❤️
