FRIDAY NIGHT… I wanted something quick and healthy so went with PERI PERI chicken, my Nando’s fakeaway rice (recipe in nightlights) and griddled veg.
I used half a pack each of nandosuk medium and lemon and herb dried seasoning with a splash of homemade hot sauce. The chicken was then griddled until slightly charred.
This was fresh and light, yet filling. Perfect as it’s been super warm today.
Simple can often be the tastiest…
