GREEK LAMB PASTA BAKE…
On Friday night I made our family favourite pasta bake. I was convinced this was already in my highlights but it’s not so I’ve got this amazing recipe for you to give it a try…
500g lamb mince
1 diced onion
3-4 minced garlic cloves
1tsp chilli flakes
2 tins chopped tomatoes
Half punnet sliced mushrooms
2 tsp dried dill
2 handfuls fresh spinach
250g conchiglie pasta (or fav of choice)
Feta, cheddar, mozzarella & fresh parsley
In a pan heat a little oil, add onion & lamb mince, cook until the lamb is brown & the drain excess fat.
Add garlic cloves, oregano, chilli flakes & stir.
Add tinned tomatoes, mushrooms, dill & season with salt & pepper. Reduce to low & simmer until the sauce is rich.
Boil pasta until just cooked but still with slight bite.
Add fresh spinach to the lamb mix, check your seasoning.
Stir in the cooked pasta & transfer half to a baking dish & top with a mix of the cheeses. Put the other half of the mix on top, repeat the cheese & bake at 180 until golden brown. (About 25mins)
Serve with a sprinkle of fresh parsley.
This keeps & reheats so well for lunches the next day.
