LOBSTER & CALAMARI…
Last night I cooked up something I’ve never made before… LOBSTER…
In fact I’ve only had it once before in Italy.
This was stunning. I made a lobster Thermidor style butter, topped it and grilled it.
I Served it with some homemade calmari & lemon samphire.
I tried a slightly different method of dredging the calamari in flour and milk and I have to say I prefer my normal batter method. But hey, the lobster was the star of this show.
The fishmonger sliced it open and I removed the green coloured “meat”. I cracked the meat from the claws and filled the lobster body with the claw meat.
Next I made a butter using 100g butter, splash of white wine, splash of single cream, 1tsp each of salt, pepper, paprika & onion powder. 1-2 tsp garlic purée, 1/2 lemon juiced and a handful of chopped fresh parsley.
Mixed together and set in the fridge. Mine didn’t set fully as I didn’t have time. I spread this over the lobster halves and grilled until hot through.
I cannot wait to make this again! Perfect Saturday night treat ❤️
