PARSLEY BUTTER MONKFISH…
Yesterday something great happened to me… I went to tescofood to find that their extra store had reopened the fresh fish counter 😍
Since so much had to close I’ve found it hard to get the selection of fish I was use to so this made my day!
I picked up a beautiful monkfish tail which I filleted, oiled and seasoned. This was pan seared until lightly golden on all sides. I added in a couple of tablespoons of homemade garlic and parsley butter. This was then transferred to an oven dish and roasted for 8-10 mins until the fish was cooked through.
I served this with a cheesy potato gratin and lemon samphire. Beautiful ❤️
Now the fish counter is open I won’t be able to stay away 🤣
