POSH FISH FINGER SANDWICH…
Surely everyone has enjoyed the classic fish finger sandwich at least once… I wanted to recreate this in a slightly more grown up form (although there’s nothing wrong with the original!)
I used haddock fillets, cut off the tail end and used the thicker end for the butties.
(Dont throw away the tail ends, use them for wraps the next day)
I egg washed the fish, coated in a mixture of breadcrumbs, Parmesan, salt, pepper & onion powder and popped them in the oven with a spray of frylighthq until golden & cooked through.
I toasted buttered ciabatta buns and loaded them up with baby gem lettuce, red onion, the crispy fish and plenty of tartare sauce…
Served with homemade chips… delicious ❤️
This felt like a nice healthier version of a classic childhood comfort food ❤️
