POTATO & FETA WEDGES WITH GREEK SEABASS…
Often the simplest flavours pack the biggest punch.
A great healthy weeknight option is this simple fish & potato dinner.
I use red potatoes, I think they are fluffier than other types. 🤷🏻‍♀️ Pealed and chopped into wedges these are par-boiled until the edges can be fluffed. Thrown in the oven at 190° with a little garlic oil (or normal oil if you don’t have garlic) for about 30 mins until lightly golden. For the last 5 mins I seasoned with salt, pepper, dried dill and crumbled over feta cheese.
Served with lemon chunks & fresh parsley these could be a meal on their own 😍
However I pan fried some aldiuk seabass which had been marinated in a little lemon, garlic purée & dried oregano and served with some tenderstem brocolli. (My staple veg right now 🙈😂)
Simple, healthy and a great family weeknight dinner.
