RIB OF BEEF CHEESY QUESADILLAS…
When you make something you really love & get to eat it twice your seriously onto a winner.
Friday night I made a lovely rib of beef as our new year treat & the leftovers were just as good.
I sliced the steak off the bone & marinaded the strips in 2 tsp chipotle chilli paste, 1 lemon juiced, 1 tsp paprika, 1 tsp onion powder, 1 tsp garlic purée and salt & pepper.
Simply pan fried until warmed through and layered onto wraps with cheese, onion & toasted on both sides until golden.
Delicious!
I like quesadillas in any form but these were so nice, plus they used up the leftovers before this mornings big shop! This marinade can be used on any piece of steak you have, just cook hot & fast to avoid it going tough.
