SAAG ALOO…
I had potatoes and some spinach that needed using up so with tandoori kebabs on the menu I thought I’d create one of my favourite takeaway sides…
I par boiled 3 large potatoes. Until slightly softened.
In a frying pan cook 1 small diced onion.
To the pan add the potatoes, 3 minced garlic cloves, 2 tsp cumin, 1/2 tsp coriander powder, 1 tsp onion powder, 1 tsp chilli powder, 1 tsp garlic powder, 1 tsp turmeric and salt and pepper to taste.
Cook the spices being careful to not break up the potato. add 1 tbsp tomato purée, 2 handfuls of spinach and a splash of water. Warm through and enjoy ❤️
