SPICY BUTTERNUT SQUASH SOUP…
Autumn has definitely arrived here… it’s absolutely freezing!
I have quite a lot of soup recipes that I make & this is one of my favourites. Packed with veg & really cosy for chilly days…
2 small or 1 large butternut squash
3 small potatoes
1 red pepper
3-4 garlic cloves
12 cherry tomatoes
1 tsp chilli flakes
1 tbsp oregano
Salt & pepper
3 bay leaves
Splash of cream.
Roughly chop all your veggies, cook in a little oil until your onions are starting to soften.
I throw in all my veg at once because it’s easier.
Add chilli flakes, oregano, salt & pepper & bay leaves. Pour in stock until your veg is just covered. Pop a lid on & simmer until all the veg is soft.
Remove bay leaves. Blend until smooth, add a splash of cream & adjust seasoning to taste. I added a little chilli paste at the end to give it an extra kick.
This will make 6 really generous portions.
Serve with your choice of bread.
