Okay so it’s not the traditional Sunday dinner but it was really good anyways.
Pan seared trout on a bubble and squeak cake with a homemade spicy tomato sauce and griddled tender stem broccoli.
The fish was seared simply with salt, pepper and oil.
The bubble and squeak cakes were potatoes mashed only with butter, salt, pepper, garlic purée, spring onion, fresh rosemary & parsley and Savoy cabbage. Pan fried and turned once until golden.
This simple tomato sauce recipe was 1 onion, 4 garlic cloves, half a punnet of cherry tomatoes, pan fried, add a splash of white wine, 100ml double cream, salt, pepper, 1 tbsp dried oregano and a grating of Parmesan.
I absolutely loved this, a great summer Sunday dish ❤️
