VEGGIE OMELETTE WITH SMOKED SALMON…
In keeping with my plan to bring you some healthy balanced meal ideas I thought I’d share this quick & easy lunch.
Eggs are healthy, filling & can make a few veggies go along way.
In a pan I added a little oil, 1/2 a red pepper, 4 asparagus stalks cut in half, the same with tenderstem brocolli & 1/2 a small red onion. I cooked for 5 mins, add a pinch of salt, pepper & chilli flakes. In with 2 whisked eggs & cook until your eggs are done. Topped with aldiuk lemon & black pepper smoked salmon which is incredible!
